But first things first…
What Is Bhelpuri?

When it comes to Indian street food, bhelpuri is one of the all time greats; it’s iconic, timeless, and with a fanbase in all corners of the country. In its essence, the dish consists of puffed rice topped with crispy puris and sev, topped with tangy tamarind and spicy green chutneys. Veggies like diced tomatoes, onions, and cilantro, are added to the already crunchy, spicy, and tangy mixture and the final result is one of the most popular chaat dishes, from the alleys of Kolkata to the lanes of Delhi.
Origins

Mumbai is a great city where a lot of incredible street food snacks have been invented and bhelpuri is just one more name in a long list. The dish was invented by one of Mumbai’s creative street food vendors who used the traditional puffed rice dishes of the West Bengal region for inspiration, and then decided to mix things up with a touch of Maharashtra’s flair for drama and flavor. This gave birth to Bhelpuri, the new poster child of culinary collaboration.
Bhelpuri Recipe Variations

As a snack that’s popular across the country, there are a few different variations and here are some of the most popular ones.
1. Sevpuri: is basically taking the classic Bhelpuri, and loading up on sev, a crispy noodle-like snack, and serving it on flat puris.
2. Dahi Puri: is a variation that features smooth, velvety yogurt (dahi) over a similar mixture and stuffed into hollow puris.
3. Jhalmuri: Direct from the streets of Kolkata, this is Bhelpuri with an Eastern twist, enriched with roasted peanuts, coconut chunks, and mustard oil.
4. Churmuri: is the Southern cover of the Bhelpuri classic, swapping tamarind chutney for a spicy chili blend.
5. Bhel with a Twist: The experimental indie version features modern ingredients like avocado, exotic fruits, and even chocolate.
And if you like chaat-like dishes, you might like some of our other street food recipes like matar kulcha, litti chokha, or pani puri.
Preparation Tips

Freshness is Key: Your ingredients need to be fresh and vibrant as possible and the puffed rice have to be super crispy.
The Timing of the Mix: Mix the puffed rice and chutneys just before serving to retain the crunch, you don’t want your bhelpuri to be all soggy.
Customize the Heat: adjust the spice level according to your audience- if you’re making it for your family that isn’t very used to spicy food, easy on the spices.
Garnish Generously: Don’t skip the fresh coriander, sev, or those juicy pomegranate pearls. They’re more important than you think.
Serving

If you want to serve it authentic street style, then you have to use a newspaper. But since you’ll be home, there’s really no need to do this and you can just use deep metal or earthen bowls or glass jars for a modern touch. Of course, don’t forget about the garnish- fresh coriander, fresh onions, fresh tomatoes, as much crunchy sev as possible, and a sprinkle of lime. Round it off with a jaljeera, lassi, or buttermilk, all of which being perfect companions for this tasty snack.
