Let’s start from the beginning…

What Is Aloo Chaat?

aloo chaat

Aloo Chaat is a popular Indian appetizer/snack that can be found at most street food stalls in all parts of the country. This snack is made of potatoes, sweet-sour-spicey chutney, sev, fresh coriander leaves, and it’s often topped with yogurt and red onions. The final result is a crispy snack that combines sweet, sour, and spicy flavors in an explosion of flavors. I know it might sound unusual if you’ve never tried Indian food before but this snack is surprisingly tasty and addictive.

Aloo chaat is typically served on roadside stalls (called ‘thelay’) and food carts and is usually eaten as a snack but it can also be eaten alongside other Indian dishes. Street vendors usually use large tawa pots to fry potatoes to perfection until they’re crisp and golden-brown but don’t worry; just follow our aloo chaat recipe and you can prepare this delicious snack at home even if you don’t have these pots.

Origin

Aloo Chaat originated in the northern parts of the Indian subcontinent, most likely from Delhi. The origin of aloo chaat is tied to the cholera outbreak of the 19th century when emperor Shah Janah and his advisors suggested cooking food that was extremely spicy to tackle the upcoming pandemic. It was around this time when most other chaat dishes like ghugni chaat, matar kulcha, aloo chaat, matar chaat, etc started appearing in different parts of the country.

The origin of the name ‘chaat’ arrives from the Hindi/Urdu word ‘chaatna’, meaning to ‘lick one’s fingers’ referring to the explosion of flavor chaat dishes offers to the foodies.

Variations

aloo chaat variations

Firstly, as we mentioned above, there are many different chaat dishes that have a similar flavor but should not be confused with aloo chaat. This list includes papdi chaat, samosa chaat, litti chokha, pani puri, bhel puri, sev puri, ghugni chaat, etc. All of these are separate (although similar) dishes made of different ingredients.

As for the aloo chaat recipe, there aren’t that many variations; the variants mostly boiled down to the geographical region and the topping preferences. For example, aloo chaat is prepared slightly differently in North India, West Bengal, Maharashtra, Pakistan, Bangladesh, and Trinidad and Tobago, mostly depending on the local ingredients that are available to be used as topping additions.

But in the end, aloo chaat is so famous and widespread because of how versatile it is. You can increase the quantity of any given ingredient based on your personal preferences and the ingredients that are available to you. Here are some of the most common variations of the alo chaat recipe:

  • You can add boiled peas and make a snack called aloo matar ki chaat;
  • You can also add boiled chickpeas and make a snack called aloo chana chaat;
  • You can also top your aloo chaat with pomegranate arils to give the snack more color and a tangy, sweet crunch.
  • You can also use sweet potatoes instead of regular potatoes if you prefer a snack that has a sweet flavor.
  • If the snack is too hot for you (beware, the recipe mentioned here is quite spicy), you can substitute the red chili powder with paprika powder or Kashmiri chili powder.

These variations aside, there are also many different ways you can play with the toppings. For example, you can use papri instead of sev, you can use mint or some other chutney instead of tamarind chutney, you can use pomegranate arils together with red onions, but you can also add chopped cucumbers, crumbled potato chips, poha chivda, or even cornflakes.

Different Methods Of Preparation

There are four main ways to make aloo chaat. The first and most popular way of preparing the aloo chaat recipe is by shallow frying raw potato pieces. A couple of popular alternatives include using boiled potatoes (that are slightly fried), adding chickpeas to the chaat, and using an air fryer or baking the potatoes (for people who are conscious about their weight or just want to eat more healthy).

Preparation Tips & Notes

Here are a few useful tips that will help you while preparing this recipe.

  • Aloo chaat is a spicy snack. If you think it might be too hot for you, you can use paprika instead of chili powder, use ½ dosage of paprika and ½ dosage of chili powder, use a smaller quantity of chaat masala, and/or increase the amount of yogurt used as a topping.
  • You can play around with the ingredients but don’t substitute the chaat masala– this is the single most important ingredient of the recipe whose presence is crucial for the snack’s unique flavor.
  • You can deep fry the potatoes, use an air fryer, or even bake them. Personally, the deep-fried version is my favorite and I warmly recommend you try this approach.
  • For the topping, always use chilled yogurt; when the yogurt is cooled, this gives the snack a whole new dimension.
  • If you’re open-minded enough, you can use both tamarind and green chutney for an even more powerful explosion of flavors.
  • Don’t go easy on the sev- this ingredient helps enhance the flavor of the snack even more.

FAQ

aloo chaat recipe

In this section, we answer a few frequently asked questions about the aloo chaat recipe.

How do you call it in English?

Aloo chaat doesn’t have a western counterpart (there’s nothing similar to it in the western world) but if we have to translate it to English, we’d call it a spicy potato snack.

What kind of potatoes to use for a crispy potato chaat?

From our experience, it’s best to use starchy potatoes because they’re low in moisture, making them a great choice for a fried potato snack. If you’re in the US, go for either Russets, Maris Piper, or Idaho potatoes.

Can I air fry potatoes for aloo chaat?

Yes, you can. Just preheat your air fryer for 5 minutes at 360 F (180 C), spread the potatoes in the fryer and air fry them for 10-11 minutes until they get a golden color and a crisp texture.

Can I bake the potatoes for aloo chaat?

Yes, that can be done too. Sprinkle 1 tablespoon of oil in your pan, spread the potatoes on a greased baking tray, preheat your oven to 400 F (200 C) and bake the potatoes for 25-30 minutes until golden brown and crispy.

Instructions

    1. Wash and peel the potatoes.

2. Cut the potatoes into 1-inch cubes and soak them in water.

3. To make green chutney, blend all the ingredients mentioned in the card above in a blender and set it aside.

4. Parboil the potato cubes for 4-5 minutes.

10. Repeat steps 7 and 8 as many times as necessary.

11. Add red chili powder, salt, cumin powder, chaat masala powder, mango powder, and chopped chilies to the potatoes, and stir well but gently; you don’t want to damage the potatoes.
