Ingredients

For the Soup

  • 500 g (1.1 lb) veal, cut into bite-sized pieces
  • 1 medium onion, finely chopped
  • 2 carrots, diced
  • 1 small celery root or 2 celery stalks, diced
  • 1 medium potato, diced
  • 1 small parsnip, diced
  • 2 tbsp vegetable oil
  • 1 tbsp all-purpose flour
  • 1 tsp sweet paprika
  • 1.5 liters (6 cups) water or light beef/veal stock
  • 1 bay leaf
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp chopped fresh parsley

For the Creamy Finish

  • 2 egg yolks
  • 150 g (⅔ cup) sour cream
  • 1 tbsp all-purpose flour
  • 2 tbsp lemon juice, optional

Instructions

    1. Heat the oil in a large pot over medium heat.

    2. Add the chopped onion and cook until soft and translucent.

    3. Add the veal and cook for several minutes, stirring occasionally.

    4. Add the carrots, celery, parsnip, and potato.

    12. Gradually stir the tempered mixture back into the soup.
