What Is Sataras?

Sataras is a traditional dish originating from the Balkan, particularly popular in Croatia, Macedonia, and Serbia consisting of cooked vegetables, including bell peppers, tomatoes, and onions, but also eggplant, zucchini, and sometimes potatoes. It’s usually a main course meal and is eaten alongside a slice of freshly baked bread or rice (although not so common). Because all Balkan countries are big-time meat eaters, it’s not the most popular dish and often a forgotten one but that’s just another reason to write this article.

I couldn’t exactly confirm where does this dish originates from it, I mean we know it’s from the Balkans and that it originates sometime in the Middle Ages but we couldn’t pinpoint the exact location where the dish was first created. It’s one of those recipes that’s passed from one generation to another and it is very popular among Orthodox Christians who fast for 40 days before Christmas and Easter but since not so many people do that nowadays, it’s’ easy to see why this dish isn’t as popular as it used to be.

While sataras is most closely associated with Croatia and Serbia, variations of the dish can also be found in neighboring countries which brings us to our next point…

Sataras Variations

Basic Sataras, as we previously mentioned includes bell peppers, tomatoes, eggplants, onions, and garlic as the main ingredients, sautéed and simmered together until tender.

Spicy Sataras is basically the same with adding chili peppers, hot paprika, or chilli flakes to the dish.

Meaty Sataras as its name suggests has meat in it, the meat is usually cubed and it’s either pork or beef but it can also be a grilled sausage added to the stew.

Mushroom Sataras is a version in which the mushrooms replace the previously mentioned meat.

Cold Sataras Salad is an interesting twist that’s usually made of leftover sataras, the ingredients need to be cold and served as a refreshing salad.

In addition to these, there are also some small differences in the way the sataras recipe is prepared in different countries like Bosnia and Herzegovina, Slovenia, Montenegro, and Macedonia and Bulgaria have a similar version of it called pindjur.

Preparation Tips

  1. The quality of the vegetables is everything- only use 100% ripe and super fresh ingredients. The quality of your sataras depends on it.
  2. Sauté the vegetables over medium heat until they soften and start to caramelise; this is very important for the flavor.
  3. As far as seasonings go, you’ll need garlic paste, parsley, paprika, black pepper, and salt.
  4. The ultimate secret is to allow the sataras to simmer on low heat as long as possible.

Serving

Sataras is primarily a main course, to be eaten on its own usually with bread like pogacha or with pastries like gibanica, langos, or kifle alongside a glass of Serbian wine or rakija (or one of the many rakija varieties) but it can also be a side dish, and people usually combine it with varieties of grilled or roasted meats.

In this article, we’ll introduce you to the traditional sataras recipe (one of the most popular Balkan dishes) and teach you everything there is to know about this delicious stew

Prep Time 10 minutes

Ingredients

  • 2-3 bell peppers (assorted colors for visual appeal)
  • 4-5 tomatoes
  • 1-2 onions
  • 2-3 cloves of garlic
  • 2 tablespoons of olive oil
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon of sweet paprika (optional, for added flavor)
  • Fresh parsley or cilantro for garnish (optional)

Instructions

    Step 1: Wash the veggies, remove the seeds, and chop everything into long and thin pieces (except the garlic, that one is to be minced).

Step 2: Sauté the vegetables.

  • Heat olive oil in a large pot or skillet over medium heat, add the onions and garlic, and saute until they start to caramelize.
  • Add the bell peppers and tomatoes.

Step 3: Season the sataras with salt, black pepper, and sweet paprika and stir well.

Step 4: Reduce the heat to low and cover the pot and allow the sataras to simmer for 20-30 minutes. Stir occassionally.

Step 5: Taste and adjust seasoning if needed.

Step 6: Remove the sataras from the heat and transfer it to a serving dish, garnish with fresh parsley or cilantro.

Step 8: Serve the sataras hot with some freshly baked bread, and/or grilled meat, and enjoy!
